In 2017, The Great Cabsy was born. Now, in its second vintage, the wine has evolved to reflect both growing season & winemaking. For 2018 we co-fermented select blocks of our 12 Mile Vineyard Cabernet Sauvignon & Syrah so we could retain the fresh, herbaceous character of early harvested Cabernet & compliment it with the richness of fully ripened Syrah to craft the next chapter of The Great Cabsy tale. Like its predecessor, the 2018 is an easy drinking wine popping with personality, a sybaritic party full of pleasure to indulge your senses, inspire your wine loving desires, & stoke those adventurous, risk taking fires. Indeed it is The Great Cabsy!
Typical Flavours: blackberries, herbaceous, chocolate, star anise, peppers
Production: Harvest simultaneously, in mid-March, we co-fermented the blend of 70% Cabernet & 30% Syrah in stainless tanks with ambient yeasts where they rested post primary ferment to be transferred to seasoned French & American hogsheads.
