The correct temperature is essential in cooking sweets for setting and cooking without burning caramelising or remaining sugary safely clipped against the side of the pan you can deep fry chicken or doughnuts with 100 accuracy. An included chart displays oil and candy stages compared to the temperature so you will know when you hit the soft ball or hard crack stage without having to translate numbers or mess about with saucers of cold water. Measurements are marked in Farenheit and Celcius and range from 40C to 185C giving for all potential recipes. Keep the thermometer in the secure sheath with pocket clip for convenient storage.
