Where do I start?! I suppose you could say I wear many hats (as a writer, social media professional, graphic designer, blogger etc). I also happen to have coeliac disease and am married to a Southern Gentleman from Louisiana USA.

How did you get into blogging?
I actually started blogging to keep my friends and family updated on Jesse and my visa process! Jesse and I had been in a long distance relationship for five years and were engaged to be married and Southern In Law was my way of keeping everyone updated as we planned our wedding and he made the big move to Aus!
That soon changed when I started sharing my favourite recipes (rather than scribbling them on bits of paper or emailing them to friends) and readers around the globe started discovering the blog!
Tell us a bit more about what your social media/ blogs include.
Southern In Law is a little bit of everything. We tend to call it a “lifestyle blog” as it includes just about everything in our lives. From healthy, allergy friendly recipes to our day to day antics, travel adventures, craft and DIY projects and more - it’s kind of like one big online journal!
Who inspires you?
My family and friends! We’re lucky enough to be surrounded by people who each have their own unique talents and abilities. I love nothing more than seeing the ones I love thrive at doing what they love - and that really encourages me to keep on sharing what I love on the blog!
What got you into cooking and recipes?
I have always been a bit of a baker and loved cooking, however, at 19 I found out I had coeliac disease and my foodie world was totally rocked. All of a sudden I went from being an incredible baker to one who couldn’t figure out how to make gluten free baked goods that didn’t resemble bricks. After giving up for a few months, I decided it was a challenge I needed to conquer and I decided I was going to put my energy into creating healthy, allergy friendly recipes that actually tasted good.
Five years later and I think I’ve managed to achieve just that! I now know how to create delicious recipes that everyone enjoys - whether they have allergies or not.
What is your top cheap, fast and healthy recipe to make this Summer?
This Asian Inspired Noodle Salad Recipe with Creamy Peanut Dressing. It’s one of those recipes that is incredibly simple but looks really impressive. Bring it to your next barbecue with friends and everyone will be impressed at your culinary prowess - and little will they know all you had to do was chop some veggies, boil some noodles and mix together a little sauce.
What is a drink we should be making this Summer?
Usually I’m not a smoothie girl but right now I cannot stop drinking this Healthy Coffee Protein Smoothie Recipe. If you’re an iced coffee fan, you’ll LOVE this - but be warned… it’s kind of addictive ;)
