With a blade length of 21cm, this traditionally styled Sashimi knife is the ideal choice for precision slicing of delicate raw fish and will respect the texture and integrity of your fine ingredients. The high-tech stainless steel blade is set into a natural Hoki wood handle which has been ridged for a superior grip as you work.This exceptional knife is made by Yoshikin in Japan, the manufacturer of renowned Global knives. It is useful to know that the balance of Bunmei knives is quite different from that of western knives and typical of all traditional Japanese knives, the blades are heavier with no bolster and only a partial tang.
