Fine surface is for citrus zest Parmesan garlic and things like nutmeg. Youd use the coarse side for soft cheeses and veggies. Ultra coarse is good for Cheddar and Mozzarella. The slicer side would handle your potatoes cucumbers and other veggies. Then you have your builtin ginger grinder
