A little larger than a paring knife and with a slight curve upward to the tip, this 13cm utility knife is perfect for working fruit and vegetables plus those smaller, more intricate tasks such as boning and filleting. Your eye will definitely be drawn to the distinctive Tai Tang pattern in the handle but the true difference is in the triple layer technology applied to the quality Japanese stainless steel blade which actually improves cutting performance. With a full tang and well weighted handle it is perfectly balanced and the cutting edge is individually sharpened to a 15 degree angle. A knife's sharpness depends on the hardness of the steel, and IO Shen uses the hardest there is. The harder the steel, however, the more brittle the blade, so the knives have an outer layer of softer, protective steel (Rockwell10°) around the central core of HRC62 steel (Rockwell 62°).
