GENUINE 1834 Limited Series - Stainless Steel. Professional Kitchen Knives This series received the 1st prize at the IWA Fair 2009 - Nuremberg - Germany (13 to 16 March 2009).
This knife is 100% forged knives in THIERS and The whole knife is forged in the mass in one piece with Z50C13 stainless steel. On this series, the cutting edge has been calibrated to remove forging cutting burrs Thermal Quenching + Cryogenic Quenching: Quenching is performed at temperatures above 1040 ° C followed by air cooling as quickly as possible.
To find the maximum hardness, it is necessary to follow the quenching with an additional sub-zero treatment (-70 ° -80 °) before carrying out the tempering. Tempering is carried out at a temperature dependent on the desired level of hardness.  For an excellent surface finish, an extra fine manual cross-polishing is carried out to remove scratches from the grinding operation and the first polishing.
The handles in POM (Black Plastic) are manually adjusted and assembled on the tang of the knife by three through rivets. Razor sharpening: the sharpening operation must meet cutting angle criteria (between 18 ° and 23 °). it must be carried out using means taking into account the nature of the blades.
