These rather humble steak knives with plastic handles (metal ones would be much more expensive) are exactly what I was looking for. The blades are of very high quality, and very sharp (take care!). They will cut any food item (except bone), but are especially effective on fibrous matter such as beef, and are great for cutting small items of bread, such as dinner rolls. They are also easy to keep clean.
