Thanks to its symmetrical shape, the black pakkawood handle is suitable for both left- and right-handed users. The slight arch on the handle's underside enables a comfortable fit. The forged tang ensures a perfect balance between blade and handle.

The Shun Minamo blade's core consists of extremely hard VG-MAX steel (61 (±1) HRC), wrapped in 32 layers of Damascus steel. The blades' high-gloss finish is completed with a Damascus grain. The combination of Santoku and cooking knife's hybrid nature, embodied in the blade's rectangular form, easily allows both rocking movements as well as the accurate chopping of cutting materials. The blades are double-edged.

Kai Tim Mälzer knives are entirely geared towards professional use. The blades are made of high quality, very hard VG MAX steel and a 32-layer coating made of soft Damascus steelHardness and elasticity are optimally combined.

The special thing about the extremely light blade, ground on both sides, is its hammered surface, called tsuchime. This not only sets attractive visual accents, it also ensures that the cut material is very easily removed from the blade surface.

The symmetrical handle made of walnut wood can be used by right and left-handers alike. The continuous tang of the Kai Tim Mälzer knives supports the balance when cutting. In the end of the handle there is an engraving, the bull's head, the trademark of Tim Mälzer.

KAI TIM MÄLZER KNIFE - THE HANDLE

The handle is ergonomically shaped and ends with a brass ring. The embossing integrated on the end cap shows a kitchen bull. Thanks to its symmetrical shape, the black pakkawood handle is suitable for both left and right-handed  users. With the extension of the cutting edge to the end of the handle (full tang construction), the blade and handle of the Kai Tim Mälzer knife are perfectly in harmony.

KAI TIM MÄLZER KNIFE - THE BEST CUTTING MAT

The use of wooden boards or plastic cutting boards with medium strength is recommended as a cutting mat. Glass or granite plates are generally not recommended as they will ruin the cutting edge of even the hardest steel. Cutting hard materials such as bones or frozen food will also damage the blade.
