Tasting Notes
Dark red to maroon centre with opaque purple and crimson red flashes on edge. A highly aromatic and complex Shiraz with great natural fruit purity at the core showing blackberry, mulberry, dark chocolate, plums, olives, earth, as well as oak. The palate has concentrated flavours of super concentrated blackberry, spicy plum, dark chocolate, and pepper as well as obvious natural fruit acidity giving further length. The juicy, dark, tannins have a wonderful length and line also, which ensures the wine, lingers for an extended period on the palate whilst the oak stands in its place perfectly and allows the natural fruit acid and notes of pepper to provide further complexity yet seemingly everything falls into line perfectly. The wine is best left to breathe prior to consuming to allow the oxygen to bring the beauty of this wine to life. Drink now or over the next decade.
Technical Notes
Fruit was selected from two vineyards one in Greenock and the other in the Moppa region in the north western Barossa Valley. Fruit was picked over a 2 week period to give concentrated fruit flavours of differing ripeness profiles. Once picked the fruit was transferred to winery and kept in several small batches for multiple blending options of the finest parcels from individual picking dates. Fermented in small open top fermenters followed by malolactic fermentation and 24 months barrel aging in French and American Hogsheads.
