The Wüsthof Classic IKON paring Knife, 9cm (3.5"), is the most versatile of all parers: for mincing shallots, onions and herbs as well as cleaning and cutting vegetables -- all easily accomplished with the comfortable grip and razor-sharp hardened stainless steel edge.
This is also my favourite paring knife shape -- I like this "spear point" shape more than the "bird's beak" or straight-edge "sheep's foot" shapes. But maybe I'm just old fashioned... they're all great really, so just use what you're comfortable with, or the one that matches your cooking style best. Precision forged from a single blank of steel with full tang. Features the popular new blade style without bolster, for ease of sharpening, full-blade length performance, and lighter weight.
