A warm-season annual Edible amaranth is also called Chinese Spinach or yin choi. Each fresh green leaf is has a rich plum red, a true bi-colour. The leaves have a sweet tangy flavour & can be cooked as an extra veggie. The plant produces a high yield of tender leaves even in warmer weather.

Perfect for microgreens, salad mixes, and as a garnish. Amaranth will tolerate hot, dry and moist conditions but will not thrive in cold temperatures.

Fresh, tender leaves and shoots can be eaten raw either in salads or juiced.

In the Caribbean, amaranth greens are known as callaloo and are one of the chief items in the popular "callaloo-soup" made with taro, ham hocks, peppers, celery, okra, coconut milk, and crabmeat.

In mainland China where the greens are called by name yin-tsai (A. tricolour or Chinese Spinach), it is employed in stir-fries and soups.

In the Indian subcontinent, the greens are called as chaulai found wide usage in curries, stews, and mixed vegetable dishes.

In Greece, the amaranth greens are popular as vleeta, boiled with other well-known green-leafy like dandelion, mustard green, chicory greens etc., dress with extra virgin olive oil and a squeeze of lemon juice and serve as the dish vrasta chorta.

Estimated time of delivery: 3-8 Business days

WA order dispatch: Once a week. WA-based customers' orders will go through the Quarantine WA inspection at the WA border.

Return & Refund Policy

At Happy Valley Seeds, we strive to ensure your satisfaction with every purchase. If you're ever unsatisfied for any reason, please don't hesitate to reach out and let us know - we'd be more than happy to provide an exchange or refund according to these conditions:

To be eligible for a return, your item must remain unused and in the same condition at which you received it. Additionally, it should retain its original packaging.

Unfortunately, we cannot accept exchanges or refunds on perishable items unless they are damaged.

For optimal satisfaction, you can return or exchange your purchase within 30 days of receiving it.

If you need to cancel an order you haven't picked up within 2 weeks after first delivery attempt, we'll need to charge a 20% restocking fee based on the seed value. Once we receive your mail order back, we will process the refund, minus the 20% restocking fees. Unfortunately, we won't be able to refund the postage, though.

If the buyer wants to change his/her mind, then the cost of returning the order will be covered by the buyer.

At Happy Valley Seeds, we are more than happy to cover the cost of return shipping for any damaged goods.
