Apple cider vinegar provides acetic acid to break down the food's surface which allows the flavours of the marinade to penetrate.


  • Pickling: all you need is vinegar, salt, and sugar! For a "quick pickle" brine, combine equal parts apple cider vinegar and water, then add 1 tablespoon each salt and sugar per cup.
