The Testamatta (‘hothead’) rosso is pure and vibrant 100% Sangiovese. Described by the label as a textbook ‘Supertuscan’, it is at once fresh and ripe, abundantly bodied and energetic. Intense with lush tannins, its fruit expression is typically Tuscan with that Bibi flair that so enchants his advocates. Made from fruit grown on 35 to 50 year old vines, followed by natural fermentation in open top barrels and 20 months of ageing, it is a pure and mineral taste of Tuscany.

Sangiovese is an absolute knock out wine with anything Italian; pizza and pasta of all sorts, tomato-based sauces, and all of those rustic garden herbs work beautifully. Mushrooms also have a particular affinity with Sangiovese — a creamy mushroom risotto is a match made in heaven.
