Tasting Notes:
A full-bodied wine with a dark red centre and bright red crimson hues. Dark Chocolate with plums, blackberries and mocha aromas working with a backbone of American oak. Intense mouth filling rich and vibrant dark berry fruit flavours with a firm and complex structure surrounded by oak. The finish will not quit staying with you for 30-60 seconds although there are elegant notes the tannins and use of brand new American oak ensure this wine will benefit from being allowed to breathe for an hour or two before drinking. This is one serious old school Barossa Shiraz. A great wine to drink upon release but will continue to develop more complexity over the next ten years. Fruit was sourced from Old Vine vineyards across the Barossa Valley. The fruit was picked then de-stemmed and fermented on skins for a period of seven to ten days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured in new American oak for 12 months.
