The palate is lush and full-bodied, balanced by luxurious cocoa powder notes. The fruit concentration is exceptional, providing a palate that is both finely textured and dense with tannins. The 2021 vintage benefited from good autumn rainfall and sporadic spring rains, leading to a better-than-average fruit set. Cool summer temperatures provided the perfect conditions for slow, even ripening, allowing the grapes to develop exceptional phenolic ripeness and vibrant colour. The cooler climate and extended growing season of Eden Valley contributed to the wine’s impressive depth and complexity, which is a hallmark of this region’s terroir.
Fermentation took place in stainless steel at controlled temperatures between 20-24°C, with gentle pump-overs performed four times a day. After fermentation, the wine was gently pressed using basket and bag presses. The wine was then matured for 18 months in a combination of 30% new French hogsheads and 70% older French oak barrels and puncheons. This maturation method enhanced the wine’s textural complexity, resulting in a refined structure that supports its rich flavours.
