SEASON
Early warm and dry season. Aromatic varieties quite fragrant and delicate.
TASTING NOTE
Bright pale green colour. Juicy and fragrant with honeysuckle, lemon curd, and mineral. Lime juice, apple, beeswax, mineral, textural, soft acidity.
WINE STYLE
French style Riesling with some texture and flavour is one of our very favourite food wines. A little residual sugar and balanced acidity seems to wash pan fried Whiting down quite well.
WINEMAKING
All fruit destemmed and gently pressed. The juice settled for 72 hours and racked to ferment. The juice is fermented cool to preserve aroma and flavour. At the desired sugar, acidic and extract balance, the wine is chilled and sulphured to stop the fermentation and prepared for bottle.
